French galette pastry and three filling ideas

French galette is not only a very cozy and beautiful pastry, but also very easy to make. If you haven’t baked yet, try these recipes and see how you get used to it.

What is galette and how do you pronounce it?

The word galette [tariama galet] in French, it means a flat, country-style cake or scone. And the main charm of galette is its imperfection, you don’t need any special baking form. The dough is simply rolled out on baking paper, the filling is spread in the middle, and the edges are loosely folded.

Basic shortcrust pastry: for sweet and savory pies

The secret of this dough is cold ingredients and quick mixing. It is most convenient to prepare the dough in a food processor (I use KitchenAid 2.1 l), but you can easily do everything by hand.

Dough ingredients (for 1 cake):

  • Wheat flour: 200 gr
  • Butter: 140 g (necessarily cold, cut into cubes)
  • Egg yolk: 1 pc. (not necessarily, I have also made it without the yolk, it turns out perfectly)
  • Ice water: 3-4 years sh. (drop a few ice cubes into a glass of water)
  • Salt: 1 pinch
  • Sugar: 1-2 years sh. (add only when making a sweet galette; do not use sugar for salty galette)

Dough preparation process:

  1. Shredding: Add flour, salt, sugar (if you are making a sweet galette), cold butter cubes and egg yolk to the bowl of a food processor. Mix everything with a few pulsating strokes until you get a smooth crumb.
  2. Adding water: Add the ice water one tablespoon at a time, pulsating briefly each time. The dough should start to stick together.
  3. Aging: Shape the dough into a ball, wrap it in cling film and put it in the fridge 30 minutes, so that the butter solidifies and the dough matures.
