Another beautiful and very simple snack for sitting with friends. I like to “optimize” the preparation while waiting for guests. Such beets can be prepared at the same time as caramelized carrots, fried tomatoes with Greek yogurt. They are somewhat similar to fried beets with yogurt – tahini sauce and pistachios, but different, after all, you don’t want to cook the same thing every time.
Caramelize the beets
I already mentioned that I put caramelized carrots and cherry tomatoes in the oven at the same time, I don’t want to heat up a hot oven. And anyway, while waiting for guests, you want not only to have a good meal, but also not to get tired 🙂
Fresh, small beets taste best when roasted, but there is no sin in cooking with boiled, peeled beets as well. I almost always go the faster way and make it with cooked beets, only when there is a choice I go for the smaller, organically produced ones.
So, peel the skin of the cooked beetroot, it usually comes off very easily just by pressing on the beetroot, drain well and cut the beetroot into larger pieces as in the photo.
Place the beets in a baking dish one layer, we need as much of the surface as possible to receive heat.
Sprinkle with spices. It is very tasty and suitable for beetroot freshly crushed coriander, fennel seeds, provence herbs.
Add a few slices of finely chopped garlic, sprinkle olive oil.
Add a spoon honey. If you don’t have honey, sprinkle with a teaspoon of brown sugar. I do not salt boiled beets. They already have salt. If the dish needs salt, it tastes better when sprinkled with Maldon salt flakes.
Place in the oven and bake about half an hour at 170-180 degrees. The liquid should evaporate and caramelize nicely.
While the beets are baking, prepare the sauce – the base.
We will mix 250 grams of thick Greek yogurt with 150 g of feta cheese. You can rub everything with a fork or spoon, or grind it quickly with a blender.
Toast a handful of walnuts. Add to the preheated pan and stir-fry for about 3 minutes until browned. Chop half of the nuts with a knife, keep the other half of the larger nuts for decoration.
Put the fried, cooled beets in a serving dish, cover with feta sauce, add chopped nuts, then larger ones. Drizzle a little with quality extra virgin olive oil, you can season and decorate with chopped dill.
Delicious!
